Processing: Grown by Jairo Arcila at Santa Monica. This microlot is 100% Pink Bourbon, exposed to a dry anaerobic fermentation period of 72 hours with the pulp on and smashed roses were added. The cherries were pulped and place to dry on raised beds to ideal moisture content.
